How to handle a client who refuses to pay - NoCV

I honestly don’t even know where to start. I’m a caterer, and recently I had a client who booked me for her husband’s 40th birthday. She paid 60 percent upfront, and we agreed on a menu that included jollof rice, fried chicken, and small chops. Everything sounded simple, but the problem started the morning of the event. When I arrived at the venue, I realized some of the ingredients she had promised to provide were missing. She assumed I would get them at my own expense, but I had already bought other items based on what she said she would bring. I tried calling her, but she wasn’t picking. I had to scramble to find replacements at the last minute, and the prices had gone up. To make matters worse, she kept changing the guest count on the day of the party. What she initially said was fifty people became eighty in less than an hour. I had already prepared food for fifty, so I had to adjust everything while keeping everything looking presentable. I worked tirelessly with my team, but I knew the portions would be smaller than planned. After the party, she called saying the food wasn’t enough and that she was unhappy with the taste, even though I had followed the menu exactly. I feel like I did everything I could under the circumstances, yet she refuses to pay the remaining balance. I honestly don’t know if I should take her to court, try to negotiate again, or just let it go to avoid conflict. I need advice. How do I handle a client who refuses to pay after I’ve delivered everything to the best of my ability under difficult circumstances?
